One of my favorite breakfasts, or late day snacks, is an easy-to-assemble parfait. And what makes it so special is homemade granola, with a nice drizzle of local honey.

GRANOLA RECIPE
pre-heat oven to 350 degrees
4 Cups of Organic Old-Fashioned Oats
1/2 Cup of Extra Virgin Olive Oil (coconut oil or avocado oil works great too)
1/2 Cup of Pure Maple Syrup (or pure local honey)

Above are the brands I use, but work with what you have access to. One thing I would highly recommend is using organic oats. And choose an oil that has health benefits; that's what sets this recipe apart from others.
Preheat your oven to 350 degrees. While you're waiting for it to warm up, mix all your ingredients together.
Next, lay a piece of unbleached parchment paper on your baking sheet. Spread your granola out across the sheet, and pat it down really well with a wooden spoon or rubber spatula.

Bake at 350 degrees for 16-18 minutes, until granola turns a light golden brown. Your house will smell amazing!

If you allow it to cool, the granola can be broken into bark-like pieces. I love enjoying it this way with a smear of Nutella or nut butter on top. It will crumble a bit as you eat it, but that's part of the fun.

Granola can be stored in an air tight container for up to two weeks. I use an extra large glass mason jar and leave it sitting on my kitchen counter. It's so delicious on its own, and I even crumble it into a bowl and pour milk over it as a homemade cereal. Add some extras like raisins and berries - you're all set! And it doesn't have unnecessary ingredients.

Take your favorite yogurt, crumble fresh, homemade granola on top, add your favorite toppings and a nice drizzle of local honey.
